Chef and Sommelier Donn Wagner became fascinated by the cuisines of Mexico – plural, not only by “Mexican cuisine” – many years ago. And today, after traveling throughout that country, he assures anyone who wonders why that “it’s not just the food, it’s the culture.” He has cooked regional Mexican cuisine, and today’s oh-so-popular “interior Mexican,” as a specialty throughout a restaurant career that eventually brought him and his wife Keithley from Colorado to the Texas Hill Country.
